Set in an ivy-wrapped manor house in the winemaking region of Burgundy, not far from Chablis, Château de la Resle has the charm of a well-loved private home. Originally built in the 17th century, the hotel sits on two hectares of landscaped gardens with glasshouses, orchards, and a vegetable garden. Working to show that luxury and sustainability can go hand-in-hand, breakfast is an indulgent affair of organic and local products; the hotel has opted not to serve meat in the mornings. Château de la Resle encourages guests to slow down and explore by bike or foot rather than drive. For oenophiles, staying local is easy in Burgundy—the château makes and serves its own wine.

The biggest hurdle is not the destination itself but travel in general. There is an inherent conflict between creating a sustainable destination that then motivates people from around the world to board a plane and travel long distances. We try to focus on local travel, preferably within Europe.
